Lehigh University Libraries Receive the Rodale Archives.

International Peace Day
Today, September 21st, is International Peace Day and so we are highlighting books for all ages about peace and from some revered peace workers including Thich Nhat Hanh. Celebrated each year around the world, International Peace Day was declared by The United Nations as a day devoted to strengthening the ideals of peace, both within and among all nations and peoples. Applesauce Oatmeal Muffins from Rodale, I made two batches which made more than two dozen. This recipe was my son’s favorite as a toddler (over 30 years ago). It is quick and easy.
Taking to work.
I seem to be on a muffin making roll. These are corn maple muffins from Rodale. No sugar and whole wheat flour along with corn meal. Some of the shapes turned out funny. Taking to work.
Whole wheat biscuits - from an original version of Rodale but removed from the later version. Luckily for my family, I had written the recipe down. It contains only whole wheat pastry flour no need for white flour. The biscuits are shown on a platter that shows a tree through all four seasons.
Since I had a discussion about what I used for this recipe and I don’t know flour science I thought I’d share. The flour on the left is unbleached all purpose flour- the flour on the right is sold as whole wheat pastry flour. The bag shows what it is called. I don’t know if this helps. But am curious if they should be calling it whole wheat pastry flour.
