Ingredients: 4 cups blackberries. 1 cup rose water. 1/4 cup lemon juice. 4 cups granulated sugar. 1 package 1.75 oz fruit pectin.
Instructions: Wash and crush the blackberries in a large pot. Add the rose water and lemon juice to the crushed blackberries, and simmer over medium heat for 10 minutes. In a separate bowl, mix the fruit pectin with 1/4 cup of the sugar. Stir the pectin-sugar mixture into the blackberry mixture, and bring to a rolling boil. Add the remaining sugar all at once, and return to a boil, stirring constantly. Boil for 1-2 minutes, or until the mixture thickens. Remove from heat and skim off any foam that forms on the surface. Ladle the hot jelly into sterilized jars, leaving 1/4-inch headspace. Seal with lids. Process the jars in a boiling water bath for 10 minutes to ensure proper sealing. Let the jars cool, and check the seals. Properly sealed jars can be stored in a cool, dark place for up to a year.
