Ingredients: 1 cup buckwheat flour. 1/2 cup all-purpose flour. 1 tsp baking powder. 1/2 tsp salt. 2 tbsp sugar. 1 cup buttermilk. 2 large eggs. 1/2 cup milk. 2 tbsp melted butter. 1/2 tsp vanilla extract.
Instructions: All-purpose flour, baking powder, salt, and sugar should all be mixed together in a bowl. Mix the eggs, milk, melted butter, vanilla extract, and buttermilk in a different bowl using an electric mixer. Add the dry ingredients to the wet ones and mix them together until everything is well mixed. This will help the batter get thicker. Let it sit for 20 minutes. Put a nonstick skillet on medium heat and use butter or oil to lightly coat it. Put a small amount of batter on the pan to make a small pancake that is about 2 to 3 inches across. Once the top starts to bubble, flip it over and cook the other side until it's golden brown. Add more butter or oil to the pan as needed and do it again with the rest of the batter. You can top the warm buckwheat blinis with sour cream, smoked salmon, or caviar, or anything else you like.
