These Rustic Peach Hand Pies are a tasty treat made with fresh peaches and a flaky pastry crust. These are great for parties, picnics, or just as a sweet snack any time.
Ingredients: 2 cups all-purpose flour. 1/2 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1/4 cup ice water. 3 cups fresh peaches, diced. 1/4 cup granulated sugar. 1 tablespoon cornstarch. 1/2 teaspoon ground cinnamon. 1 egg, beaten for egg wash. Turbinado sugar, for sprinkling.
Instructions: Pulse flour and salt together in a food processor. Pulse the mixture until it looks like coarse crumbs after adding the cubed butter. Add the ice water slowly and pulse the food processor until the dough comes together. Make a disc out of the dough, wrap it in plastic wrap, and put it in the fridge for at least 30 minutes. Warm the oven up to 190C 375F. Put parchment paper on the bottom of a baking sheet. Diced peaches, granulated sugar, cornstarch, and cinnamon should all be mixed together in a bowl. Add toss to cover evenly. Roll out the chilled dough to about 1/8 inch thick on a floured surface. Cut circles of dough with a round cutter. On one half of each dough circle, put a spoonful of the peach mixture. To make a half-moon shape, fold the dough over the filling. To seal, press the edges together and then use a fork to make a crimp. Place hand pies on the baking sheet that has been prepared. Spray with egg wash and cover with turbinado sugar. Put pies in the oven for 20 to 25 minutes, or until they are golden brown and the filling is bubbly. Let pies cool down a bit before you serve them. Have fun!
