Hope you're all having a lovely X-mas! I made a Swedish mudcake, but with saffron and white chocolate. I tastes great!

Soft Swedish Saffron Cake **the best i’ve ever made**

Dear Foodies,

It has long been known that i am no master of making cakes but i thought... why not make a pre-christmas kinda cake and a soft one on top of that! Gotta say that BY FAR(!) this is the best cake i’ve ever made. 

Recipe:

Turn on the oven to 180°C. 

The Cake:

175 grams soft butter (Milda bakmargarin)

2 pkt of saffron (0.5g/pkt)

2 eggs

3 dl sugar

2 tsk baking powder

1 ½ dl milk

3 ¾ all purpose flour

coconut flakes for the oven form

For Garnish:

 Powdered sugar

Melt the butter in a pan with the saffron on low-medium heat. 

Whisk the eggs and sugar until white and fluffy in a large bowl. 

Add the baking powder, flour, milk and butter/saffron mixture into the eggs and sugar bowl. Whisk it all together to a smooth batch. 

Pour the mixture into a buttered and coconut covered oven-friendly form. 

Bake the cake at the bottom jack of the oven for 42-45 minutes. 

Let it cool, then add the powdered sugar as decoration! :)
