Ingredients: 250g pasta shells. 300g pumpkin, peeled and diced. 1 tablespoon olive oil. 1 garlic clove, minced. 200g ricotta cheese. 1/4 cup grated Parmesan cheese. 6-8 fresh sage leaves, chopped. Salt and pepper to taste.
Instructions: Preheat the oven to 200C 390F. Boil the pasta shells according to package instructions until al dente. Drain and set aside. Toss the diced pumpkin in olive oil, minced garlic, salt, and pepper. Roast in the preheated oven for 20-25 minutes or until tender. In a large bowl, mix together the cooked pasta shells, roasted pumpkin, ricotta cheese, grated Parmesan cheese, and chopped sage leaves. Season with salt and pepper to taste. Serve hot, garnished with extra sage leaves and Parmesan cheese if desired.
