Ingredients: 4 salmon fillets. 1 lemon, sliced. 1/4 cup olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon dried thyme. Salt and pepper to taste. 1 cup cherry tomatoes, halved. 1/4 cup Kalamata olives, pitted and sliced. 2 tablespoons capers, drained. Fresh parsley, for garnish.
Instructions: Preheat oven to 400F 200C. In a small bowl, whisk together olive oil, minced garlic, dried oregano, dried basil, dried thyme, salt, and pepper. Place salmon fillets on a baking sheet lined with parchment paper or aluminum foil. Brush salmon fillets with the olive oil mixture. Arrange lemon slices on top of each fillet. Scatter cherry tomatoes, Kalamata olives, and capers around the salmon fillets on the baking sheet. Bake in the preheated oven for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork. Garnish with fresh parsley before serving.
