Mexican Stuffed Shells are a comfort food that combines the tastes of traditional Mexican food with pasta. There is seasoned ground beef, black beans, corn, salsa, and cheese inside these stuffed shells, which makes them a filling and tasty meal.
Ingredients: 1 lb ground beef. 1 package 12 ounces jumbo pasta shells. 1 can 15 ounces black beans, drained and rinsed. 1 cup frozen corn, thawed. 1 cup salsa. 1 cup shredded Mexican cheese blend. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Chopped fresh cilantro, for garnish.
Instructions: Preheat oven to 350F 175C. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside. In a skillet over medium heat, cook ground beef until browned and no longer pink. Drain excess fat. In a large bowl, combine cooked ground beef, black beans, corn, salsa, 1/2 cup of shredded cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stuff each cooked pasta shell with the beef mixture and place them in a greased baking dish. Sprinkle the remaining shredded cheese over the stuffed shells. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 5-10 minutes, or until cheese is melted and bubbly. Garnish with chopped cilantro before serving.
