These Sweet Paul's Spice Cookies are a delightful blend of warm spices and chopped nuts, offering a cozy and comforting flavor in every bite.
Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1/2 cup brown sugar, packed. 2 large eggs. 2 3/4 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground allspice. 1 cup chopped nuts walnuts or pecans.
Instructions: Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy. Add the eggs one at a time, making sure that each one is fully mixed in. Put the flour, baking soda, salt, cinnamon, ginger, cloves, nutmeg, and allspice in a different bowl and mix them together with a whisk. Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. Add the chopped nuts and mix them in. Put the dough in the fridge for at least an hour with plastic wrap over it. Warm the oven up to 375F 190C and put parchment paper on baking sheets. For the baked goods, prepare the baking sheets and then roll the chilled dough into small balls. Make each ball a little flatter with the back of a fork. After the oven is hot, bake for 9 to 11 minutes, or until the edges are just beginning to turn golden. Once the cookies are done, take them out of the oven and let them cool for a few minutes on the baking sheets. Then, move them to wire racks to cool completely.
