A tasty mix of grilled chicken and creamy California avocado salsa that is full of nutrients and flavor.
Ingredients: 4 boneless, skinless chicken breasts. 2 ripe California avocados. 1/4 cup chopped cilantro. 1/4 cup diced red onion. 2 cloves garlic, minced. 1 lime, juiced. 1/2 teaspoon cumin. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Set the grill or grill pan over medium-high heat to get it hot. Add cumin, salt, and pepper to the chicken breasts. Use olive oil to coat the chicken breasts. The chicken breasts should be cooked all the way through after being grilled for 6 to 7 minutes on each side. Do this in a bowl while the chicken is cooking. Add the lime juice, chopped cilantro, diced red onion, and minced garlic. To taste, add salt and pepper to the avocado mix. Take the chicken off the grill when it's done and let it rest for a few minutes. Put a lot of the avocado mixture on top of each chicken breast. Serve right away, with extra cilantro and lime wedges on top if you want.
