Kashmiri Namkeen Chai | Salt Tea | Pink Tea | Breakfast Series | Rise & Shine
We present here the authentic way of preparing the Kashmiri ‘Nun’ or ‘Noon’ or ‘Namkeen’ tea. ‘Nun’ or ‘Noon’ or ‘Namkeen’ chai means Salt Tea in Kashmiri. As the name suggests the traditional Kashmiri ‘Nun’ chai is salted and never is sugar added to it. Although newer commercial preparations in Indian and Pakistani restaurants and tea stalls may include sweetener - (Wiki). ‘Nun’ chai is also known as ‘Sheer Chai’, ‘Pink’/’Gulabi’ tea (Due to its pink color). The prominent pink color of the tea is due to the burgundy color which is attained due to the extraction of Chlorophyll from the tea leaves due to reaction caused by adding Sodium Bicarbonate (Baking Soda). By adding milk the burgundy color changes to pink color.
Recipe to make Kashmiri Salt Tea:
Ingredients:
For making Tea Concentrate (‘Toath’)
1. Gunpowder Tea/Green Tea ½ cup
2. Baking Soda (Sodium Bicarbonate) – 1 pinch
3. Water – 4-5 cups
For making actual tea:
1. Diluted tea mix: 1 Cup
2. Dry Coconut (Sliced) – 5 to 6 slices
3. Almond (Sliced/Grated) – 2 to 3
4. Salt –1/2 tsp( for 2 cups of nun chai)
5. Milk –1 cup
Method: To make tea concentrate ‘Toath’
1. Add Tea, water and baking soda in a pan.
2. Boil it for ~45 min to 1 Hr until the mixture turns dark burgundy color. Depending on tea, it may need more water until desired color is reached
3. When 80% water reduces , switch off the flame
4. Tea concentrate is ready
To make the tea:
1. Strain the concentrated tea and dilute it with equals amount of water
2. Boil 1 cup of diluted tea, 1 cup of milk, 1 pinch of salt, coconut slices and almond slices.
3. Serve with Kashmiri 'tchot' or 'lavas' (Tandoori bread)

So today, I was eating lunch with my boyfriend and we were messing with each other's stuff, and I dropped his keys on the floor. So, to retaliate he put some salt in my tea (I was still gonna drink it, it's just salt). Then, a few minutes later, I looked at him and chuckled as I was about to drink it and said, "Wow, this is salt tea." :D haha I thought I was hilarious and chuckled about it for like five minutes and he just shook his head lol
WE all just need to calm down about tea and learn how to make it the right way
