While Ang Ku Kueh (红龟粿) means red tortoise cake in our local Hokkien dialect, they do come in various colours and with assorted fillings. This plate of colourful ang ku kuehs from Ji Xiang Ang Ku Kueh (吉祥红龟粿) are filled with sweet fillings of Corn (玉米), Yam (芋头), Peanut (花生) and Coconut (椰子).
While ang ku kuehs generally has a sweet filling, this Salted Bean Ang Ku Kueh (咸豆沙) comes with a savoury mung bean filling fragranced with shallot oil and enclosed with a soft and chewy glutinous rice skin. The banana leaf underneath added its own fragrant during the steaming process.
