It's mostly because a corner, especially a sharp corner is harder to damage by artillery fire and a star just happens to be a good balance of corners and enclosed protected space. Also the field of view for fire from within the fort. These started replacing more square and rounder designs as siege weapons shifted from catapult to artillery.
