Vegan Samoa Bars are a delightful treat reminiscent of the classic Girl Scout cookies. These bars feature a buttery almond and coconut crust topped with a gooey coconut and chocolate layer. They are easy to make and perfect for satisfying your sweet cravings!
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 cup shredded coconut. 1/2 cup dairy-free chocolate chips. 1/4 cup coconut milk. 1/4 cup coconut sugar. 1 tsp vanilla extract. Pinch of salt.
Instructions: Preheat oven to 350F 175C and line an 8x8 inch baking dish with parchment paper. In a mixing bowl, combine almond flour, coconut flour, maple syrup, melted coconut oil, and a pinch of salt. Mix until a dough forms. Press the dough evenly into the bottom of the prepared baking dish. Bake for 12-15 minutes, until the crust is golden brown. Remove from oven and let cool. In a saucepan, combine shredded coconut, dairy-free chocolate chips, coconut milk, coconut sugar, and vanilla extract. Cook over low heat, stirring constantly, until the chocolate chips are melted and the mixture is well combined. Spread the coconut-chocolate mixture over the cooled crust. Refrigerate for at least 1 hour, or until set. Once set, cut into bars and enjoy!
