This Easy Vegan Banana Bread tastes great and stays moist. Simple ingredients make it easy to make, and it's great for breakfast or a snack.
Ingredients: 1 1/2 cups mashed ripe bananas about 3 bananas. 1/3 cup melted coconut oil or vegan butter. 1/2 cup maple syrup or agave syrup. 1/4 cup plant-based milk such as almond milk or soy milk. 1 teaspoon vanilla extract. 1 3/4 cups whole wheat flour or all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon optional. 1/4 teaspoon ground nutmeg optional.
Instructions: Set the oven to 350F 175C and heat it up. Grease a 9x5-inch loaf pan just a little. Mash the bananas and add them to a large bowl. Then add the plant-based milk, maple syrup or agave syrup, vanilla extract, and coconut oil or vegan butter. Then mix in the cinnamon, nutmeg, baking soda, salt, and flour. Don't overmix; just stir until everything is mixed. As soon as the loaf pan is ready, pour the batter into it and use a spatula to smooth the top. Bake for 55 to 65 minutes, or until you can stick a toothpick in the middle and it comes out clean. Take the banana bread out of the oven and let it cool for 10 minutes in the pan. After that, move it to a wire rack to cool completely before cutting it.
