Ingredients: 2 cups sushi rice. 1/4 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. Nori sheets. Assorted sashimi tuna, salmon, yellowtail. Wasabi. Soy sauce. Pickled ginger.
Instructions: Rinse sushi rice under cold water until water runs clear, then cook according to package instructions. In a small saucepan, combine rice vinegar, sugar, and salt. Heat until sugar and salt dissolve. Let cool. Spread cooked rice onto a flat surface and gently fold in the vinegar mixture until well combined. Place a sheet of nori on a bamboo sushi mat, shiny side down. Spread a thin layer of rice evenly over the nori, leaving about 1 inch of nori uncovered at the top. Arrange slices of sashimi in the center of the rice. Roll the sushi tightly using the bamboo mat, moistening the top edge of the nori with a little water to seal the roll.
