Ingredients: 8 oz pasta. 2 large red bell peppers, roasted and peeled. 2 cloves garlic. 1/3 cup toasted pine nuts. 1/3 cup grated Parmesan cheese. 1/4 cup extra virgin olive oil. Salt and pepper to taste. 4 oz goat cheese, crumbled. Fresh basil leaves for garnish.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Drain the pasta and set it aside. Save 1/2 cup of the pasta water. Put roasted red peppers, garlic, pine nuts, Parmesan cheese, and olive oil in a food processor and blend them together. Pulse until smooth. If you need to, add the pasta water you saved to get the consistency you want. Add pepper and salt to taste. Mix the cooked pasta with the pesto made from roasted red pepper until it is well covered. Place pasta on plates and sprinkle goat cheese crumbles on top of each one. Before serving, sprinkle with fresh basil leaves.
