The Thai spelling is คั่วกลิ้ง. The name is commonly explained as coming from คั่ว meaning to dry-roast or stir-fry, and กลิ้ง meaning to toss/roll, which fits the cooking method of frying the meat and paste until dry and coated. In English, people may call it “Khua Kling,” “Kua Kling,” or “Southern Thai dry curry”.
Khua Kling is not a saucy curry; it is a very dry, intensely spicy dish where the meat is stir-fried until the seasoning clings to it. It is typically finished with ingredients like kaffir lime leaves, green peppercorns, lemongrass, and fresh chilies, which give it a sharp, fragrant heat. It is often served with rice and cooling vegetables such as cucumber, cabbage, or snake beans.
The exact origin story is not well documented, but sources consistently place Khua Kling in Southern Thailand, especially in connection with southern cooking traditions and often the Pattani area. It is also described as closely associated with the Muslim communities of Southern Thailand and as a more humble, working-style dish built from simple ingredients and a hand-pounded curry paste. Over time it became one of the signature dishes of southern Thai cuisine.
