Indulge in the rich and comforting Cream of Broccoli Cheese Soup from Lord Byron's Kitchen. Velvety smooth, this soup combines the goodness of broccoli and the richness of cheddar cheese for a satisfying bowl of warmth.
Ingredients: 4 cups broccoli florets. 1/2 cup unsalted butter. 1/2 cup all-purpose flour. 4 cups chicken broth. 2 cups whole milk. 1 cup heavy cream. 2 cups shredded sharp cheddar cheese. Salt and pepper to taste. 1/2 teaspoon nutmeg. 1/2 teaspoon garlic powder.
Instructions: Steam the broccoli in a big pot until it's soft. Put away. Set the pot back on medium heat and melt the butter in it. To make a roux, add flour and stir it in. Mix in the milk, heavy cream, and chicken broth little by little with a whisk. Shred the cheddar cheese and stir it in until it melts and is smooth. Salt, pepper, nutmeg, and garlic powder can be used to season. Add the steamed broccoli and let it cook for another 10 to 15 minutes. Serve hot, and if you want, top with more cheese.
