Step 1 For satsivi, wash the chicken and cut off the excess fat. Put it in a large pot, pour a small amount of hot water (so that it only covers the bird), bring to a boil and cook on low heat for 30 minutes. Step 2 Gently lay the chicken on a plate. Strain the broth through a frequent sieve. Let the chicken cool a little, then transfer it to a deep baking sheet lined with food foil Step 3 Melt butter (20 g) and use a brush to grease the carcass with it. Put them in a hot nut sauce, bring to a boil and cook for 1 minute. Step 9 Wash the cilantro twigs and chop finely. Peel and pass the garlic through a press. Add garlic and cilantro to satsivi along with cilantro. Stir and remove from heat. Step 10 Let the chicken satsivi cool completely, transfer to a serving plate and then put in the refrigerator. Sprinkle pomegranate seeds over the snack before serving.
Spices for satsivi can be varied as desired. Dried basil, uchi-suneli and dried mint can also be added to the suneli hops and coriander with saffron. Spices not only give the dish shades of taste and aroma, but also extend its shelf life. Chicken satsivi sauce should not be dark, so after adding walnuts, cook it for a short time (strictly according to the time specified in the recipe) and certainly on low heat.

Satsivi - Chicken with Walnut Sauce
Satsivi is Georgian traditional dish, which you can find in every Georgian family during new year time. The word "Satsivi" itself is derived from the Georgian word "tsivi" (cold) referring that the dish must be eaten cold.
Ingredients (serves 4 – 6): 4 chicken breast fillets (total weight 500g / 1 1/4 lb); You can also use whole chicken or turkey 500ml cold water (or enough to cover the chicken) 1 tsp salt 3 tbsp rapeseed oil 2 white onions, finely chopped 2 garlic cloves, crushed 100g walnuts 1 tsp ground coriander 1 tsp cayenne pepper Step 1 Put the chicken in a medium-sized pan, cover with cold water and bring to the boil; Reduce to heat and simmer for 5 minutes; Skim the surface if necessary; Add the salt, cover and cook for 15 minutes.
. Step 2 Heat the oil in a small frying pan; Fry the onion and garlic for 5 minutes.
