This spicy and tasty salsa is made by combining the sourness of tomatillos with the sweetness of pumpkin. It makes a unique and tasty dip or topping for many foods.
Ingredients: 1 cup diced tomatillos. 1 cup diced pumpkin. 1/2 cup diced red onion. 1 jalapeno pepper, seeded and diced. 1/4 cup chopped fresh cilantro. 2 tablespoons lime juice. 1 tablespoon olive oil. Salt to taste. Pepper to taste.
Instructions: Dice the tomatillos, pumpkin, red onion, jalapeno pepper, and cilantro and put them in a bowl. Mix the olive oil and lime juice well in the bowl. Add pepper and salt to taste. Put the bowl in the fridge for at least 30 minutes with the lid on to let the flavors mix. Cool it down and serve it with tortilla chips or on tacos, salads, or grilled vegetables.
