Sometimes I’ll end up with lots of leftover bread in my freezer. To use up the bread, I love to make savoury bread pudding. Full of cheese, veggies and custardy bread, this dish is hard to beat.
This dish is very versatile and works well with leftovers. Begin with cutting your bread into 1 inch cubes. You need about 4 cups.

So this is the one that I made for Dad’s birthday. I put some chicken on top of it, but there’s no need to do that (though I may add my fried chicken recipe after)
You can also swap the bacon out with mushrooms if you’d like to make it vegetarian - though there are definitely eggs and milk and cheese involved.
Specifically Gruyere cheese which for me is a selling point on any dish. It’s a cheese that has a more distinctive, smoky flavour than Swiss but it’s quite firm and easy to work with. It’s pricey, but considering the relative simplicity of the rest of the dish, quite worth it.
My Dad is one of my toughest critics - so high praise from him, and there was on this dish - is a very VERY good sign.
2 cups grated Gruyere cheese (Swiss would work as well, 1/2 cup reserved)
1 large loaf of crusty bread - the great thing about this is go to the day-old or on sale section. Bread for bread pudding is supposed to be somewhat stale so go get the discount stuff
5 eggs
1/2 cup double (Whipping cream)
1.5 cups whole milk (If you can’t think of a reason to buy whole milk, buy the smallest amount and plan out a few baking projects. That hack about adding an extra egg and subbing the water for milk in boxed cake mix is actually a good tip and whole milk/homogenized if you live in Canada will work best)
6 cups baby spinach
3 large fresh basil stems, individual leaves removed
5 cloves of garlic, crushed
1 small red onion or 2 large shallots, diced
12 slices bacon, coarsely chopped (or 2 cups of mushrooms - bay bella or portobello, coarsely chopped)
salt and pepper
butter (for greasing dish and for finishing mushrooms if using)
olive oil (if using mushrooms)
1. Chop up the bread into large 1-inch chunks. You should be working with about 6 1/2 cups.
2. dice and cook the bacon. Transfer to a paper towel to absorb the grease. Save the grease if you do, but definitely reserve one and a half tablespoons in the pan. I
2a If doing mushrooms, sautee the garlic, mushrooms and onion together in olive oil, add the spinach and basil as below, then finish with a small knob of butter.
3. Dice the onion and crush the garlic. Add to the hot grease. Cook until translucent then reduce the heat to medium low and add the spinach and basil leaves. Cook until wilted
4. Grate 2 cups of cheese. Set aside about 1/2 a cup
5. In a large bowl (big enough to hold all ingredients) crack and whisk together 5 eggs, cream and whole milk with salt and pepper. Add the cheese. Add the onion/spinach garlic mix. add the bacon. Add the bread and use your fingers to coat and mix everything together.
6. Coat a large pan with nonstick spray or butter. Spoon the mixture in and spread eveniy. Top with remaining 1/2 cup cheese. Cover with a lid or a piece of tinfoil
7. Bake at 375 for 30 minutes. Uncover, bake for another 10 minutes
