This sesame ginger tofu stir-fry is a quick and flavorful vegan dish packed with protein and vegetables. The combination of savory soy sauce, aromatic ginger, and nutty sesame seeds creates a delicious and satisfying meal that can be whipped up in no time.
Ingredients: 1 block tofu, pressed and cubed. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 tablespoon maple syrup. 2 teaspoons grated ginger. 2 cloves garlic, minced. 1 tablespoon cornstarch. 2 tablespoons water. 2 cups mixed vegetables bell peppers, broccoli, carrots. 2 tablespoons sesame seeds. Cooked rice or noodles, for serving.
Instructions: Combine soy sauce, rice vinegar, sesame oil, maple syrup, grated ginger, and minced garlic in a bowl. To make a slurry, combine cornstarch and water in a separate small bowl and whisk until smooth. Add the tofu cubes to a large skillet that has been heated to medium-high heat. Cook for 5 to 7 minutes, or until golden brown on all sides. After adding the sauce, toss the tofu to ensure even coating. Simmer for an additional two minutes. Stir-fry the mixed vegetables in the skillet for three to five minutes, or until they are crisp-tender. After adding the cornstarch slurry to the skillet, thoroughly stir the sauce until it thickens. Add sesame seeds to the stir-fry and mix thoroughly. Serve the hot sesame ginger tofu stir-fry with noodles or cooked rice. Have fun!
