This vegan basil coconut curry with tofu and avocado is a creamy and flavorful dish that's perfect for a cozy dinner. The combination of coconut milk, curry spices, and fresh basil creates a rich and aromatic sauce that pairs beautifully with the tender tofu and creamy avocado.
Ingredients: 1 block tofu, cubed. 1 can coconut milk. 1 onion, diced. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 1 red bell pepper, sliced. 1 cup cherry tomatoes, halved. 1 cup fresh basil leaves. 1 avocado, diced. 2 tablespoons soy sauce. 2 tablespoons curry powder. 1 tablespoon coconut oil. Salt and pepper to taste.
Instructions: Heat the coconut oil in a big skillet over medium heat. Add the minced ginger, garlic, and onion. Saut for two to three minutes, or until aromatic. Cook the cubed tofu in the skillet for five to six minutes, or until it begins to brown slightly. Evenly coat the tofu by stirring in the soy sauce and curry powder. After adding the coconut milk, simmer the mixture. Add the cherry tomatoes cut in half and the sliced red bell pepper. Allow flavors to meld by cooking for an additional five minutes. To taste, add salt and pepper for seasoning. Take the skillet off of the burner and add the fresh basil leaves. Top the curry with diced avocado and serve it over cooked rice or quinoa. Have fun!
