Highlights include their old-school ‘Upside Down’ Siew Mai (filling is placed on top of a quail egg and the skin wrapped over) and the ‘Shark’s Fin Dumpling’ (pic 3). It doesn’t contain any actual fin, but the traditional dim sum—of minced pork, shrimp, diced mushroom, coriander, water chestnut and diced red carrots—gets its name from the artfully folded skin to resemble that of a fin.
