Ima C's Easy Pareve (Dairy free!) Cheesecake!
As Shavuous is upon us, and everyone is preparing cheesecake (which has somehow become the unofficial traditional desert of the holiday) I can't help thinking of those who cannot eat dairy and must miss out on this most delicious of deserts. It just so happens that I have a delicious non-dairy cheesecake recipe, from my best friend's mother. It tastes like real cheesecake and is so simple to make. So here is Ima C's Pareve Cheesecake: Ingredients: - 2 containers of Tofutti Better Than Cream Chese - 2 eggs - 3/4 cup of sugar - 1 drop lemon juice + a graham cracker crust (fresh or store bought - I like the Keebler crusts) Instructions: Preheat oven to 350 degrees Fahrenheit. Combine ingredients in mixing bowl. Mix together until smooth and creamy. It can be done by hand but a mixer does it much quicker. Pour batter into the crust and bake for 45 minutes at 350. Turn off oven and let it cool in the cooling oven, then let it cool further on the counter. Refrigerate. It's delicious as is but there are so many ways to vary this! Ima C usually pours a can of cherry pie filling over the top when she is ready to serve it. Sometimes I add a little cocoa powder to get a chocolate cheesecake, or I use a chocolate graham cracker crust! You can serve it with a little bit of a complimentary liqueur over it! Possibilities are endless. Go forth and cheesecake!
