It's been a while since I last updated my blog with Iftar dishes I made last week. But for all of you who fast in Ramadan, between the cooking and the cleaning and working and breaking fast and feeling like a cow after breaking your fast, you tend to feel too darn lazy to do anything and without even knowing you go into deep coma. Well in my case, this is what has been happening for the first week of Ramadan.
I have an obsession, it's called eggplants. I made my favorite dish, Maghmour for the very first time. It's eggplants with tomato sauce, onions, garlic and chickpeas. Thankfully I had my Skype on, in case of any emergency, my mom was one click away.
Also for our iftar day 2, we had Shishbarak, Lebanese meat stuffed dough in yoghurt sauce. I can't take all the credit in this one. When visiting my parents, my mom made the meat stuffed dough to take with me to St. Maarten. All what I had to do was fry the stuffed dough and make the yogurt. I had trouble with frying because I left the oil heat for too long which ended in burning a few of the meat dough and my finger. But in the end, it was one tasty meal and worth it.
I ended up having left over for the next day which was a blessing.
