This Apricot Basil Shortbread Tart combines the sweetness of apricots with the aromatic flavor of fresh basil, all atop a buttery shortbread crust. It's a delightful balance of flavors perfect for any occasion.
Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1/2 cup unsalted butter, cold and cubed. 1/4 teaspoon salt. 1/4 cup apricot preserves. 1/4 cup fresh basil leaves, chopped. 6-8 fresh apricots, sliced. 2 tablespoons honey.
Instructions: Warm the oven up to 175F 350C. Pulse the flour, sugar, butter, and salt together in a food processor until the mixture looks like big crumbs. Spread the mixture out evenly in a tart pan whose bottom can be taken off. If you want a light golden brown crust, bake it for 20 to 25 minutes. Spread apricot preserves evenly over the bottom of the crust after it has cooled a bit. Spread chopped basil on top of the jam. Put apricot slices on top of the basil in a way that looks nice. Sprinkle honey on top of the tart. Put it in the fridge for at least 30 minutes before you serve it.
