These low carb keto brownie bites are a perfect indulgence for anyone following a keto diet. They're rich, chocolatey, and satisfying, without all the carbs of traditional brownies.
Ingredients: 1 cup almond flour. 1/2 cup unsweetened cocoa powder. 1/2 cup erythritol or any keto-friendly sweetener. 1/4 teaspoon salt. 1/4 cup melted coconut oil. 2 large eggs. 1 teaspoon vanilla extract. 1/4 cup sugar-free chocolate chips optional.
Instructions: Start by heating the oven to 350F 175C. Add cocoa powder, erythritol, salt, and almond flour to a bowl. Mix them all together. Melt the coconut oil and mix it in with the eggs and vanilla extract. Mix everything together well. If you want to, fold in sugar-free chocolate chips. Fill each mini muffin tin lined with parchment paper about three quarters of the way to the top with batter. If you stick a toothpick into the middle and it mostly comes out clean, it's done baking.
