Ingredients: 3 lbs pork loin roast, butterflied. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 1/4 cup fresh parsley, chopped. 2 cloves garlic, minced. 1/2 cup dried cranberries. 1/2 cup chopped pecans. Salt and pepper to taste. 2 tablespoons olive oil. Kitchen twine for tying.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put breadcrumbs, Parmesan cheese, parsley, garlic, cranberries, pecans, salt, and pepper in a bowl.
