This Rosemary Garlic Rib Eye Roast with Rioja Wine is a fancy seafood dish that's great for holidays or special occasions. For seafood lovers, the strong flavors of garlic, rosemary, and Rioja wine go well with the juicy rib eye roast, making your mouth water. This dish is easy to make and will impress your guests. It will also make your dining experience better.
Ingredients: 2 lbs fresh rib eye roast. 3 cloves garlic, minced. 2 tablespoons fresh rosemary, chopped. Salt and pepper to taste. 1/4 cup Rioja wine. 1 tablespoon olive oil.
Instructions: Preheat the oven to 375F 190C. In a small bowl, mix minced garlic, chopped rosemary, salt, and pepper. Rub the mixture evenly over the rib eye roast, ensuring it's well coated. Heat olive oil in a skillet over medium-high heat. Sear the rib eye roast on all sides until browned, about 2 minutes per side. Transfer the roast to a roasting pan. Pour Rioja wine over the roast. Roast in the preheated oven for about 25-30 minutes for medium-rare or until desired doneness is reached. Remove from the oven and let it rest for 10 minutes before slicing. Serve slices of the rib eye roast with any pan juices as desired.
