Smith's Smokery - they do it so well. Terry Smith has a rare license to catch silver eels in the fens of Lincolnshire, they are still caught in baskets, as they have always been. Their retail is at produce and farmer's markets across the East Midlands. I bought these on the Friday market in Stamford from Terry's son-in-law Simon.
