Roast chicken experiment was a success and maybe one of the best chickens I’ve ever roasted; I made a compound butter with muscovado sugar, apple cider vinegar, salt, pepper and Chinese five spice. The bird is stuffed with sweet onion and garlic clove, and after putter the butter under and over the skin, I also liberally sprinkled it with Lowry’s. Convection set to 425, I made a tin foil dome for 75% of the cook time, then browned/crisped the skin without it for the first then 25%.
