Mushroom duxelles roast beef

I'm particularly proud of tonight's dinner! Sirloin Tip pot roast with diced white potatoes, baby carrots, celery and sautéd white and crimini mushrooms in beef broth! I kept some of the mushrooms aside to cook separately and combined them with the broth once the roast was done to make gravy. It's genuinely the best roast I've ever made.

It doesn't look like it but there's beef under there lol
