Ingredients: 1 cup old-fashioned oats. 1/2 cup whole wheat flour. 1/4 cup unsweetened cocoa powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/4 cup unsweetened applesauce. 1/4 cup honey. 1 tbsp coconut oil. 1 tsp vanilla extract. 1/4 cup mini chocolate chips. 1/4 cup crushed nuts optional.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a food processor, pulse the oats until finely ground. In a bowl, whisk together the ground oats, whole wheat flour, cocoa powder, baking soda, and salt. In another bowl, mix together the unsweetened applesauce, honey, coconut oil, and vanilla extract. Combine the wet and dry ingredients, then fold in the mini chocolate chips and crushed nuts if using. Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet. Bake for 8-10 minutes or until the cookies are set. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
