Black bean pasta with Tofu, peas and pesto
This is nothing new, it's quite classical czech meal that you can encounter in school cantines, and it happens to be vegan :)(sometimes people make it with egg tho). Cauliflower 'brain' (yes its called like that) -Fry an onion -Slightly cook the cauliflower, then add it to the pan + add some spice and herbs to your liking (this here was with garam masala spice mix) -Cooked potatoes and fresh tomstoes as a side dish... Its real quick, easy and delish!
Spelt grain + peas ‘risotto’
I cooked this simple and delicious thing. I used: spelt grain a mix of dried vegetables from a shop (it contains onion, tomatoes, celery, carrot) frozen peas 3 cloves of garlic and one leftover spring onion.
First i fried the onion a bit (on an olive oil), then added water and the rest of the ingredients, garlic coming last and cooked it all. I added some fresh bell pepper at the end. As for spice, i used salt, basil and dried garlic powder.
