[Pork tenderloin à la Bernard. It does make me feel as if I have gone back to Germany. Eternal and God could not have created eternal evil. And small beer. That's the beginner's size.]

Wild Small Beer Spiced Porter Tasting Notes
Wild Small Beer Spiced Porter experiment has been in the bottle for 2 months now. Unfortunately first aroma reminds me of a kit brew rather than all grain, I'm guessing that this is because most of the fermentables were sugars rather than maltose when I bumped up the OG. The spices hint of astringency but the flavour isn't too bad. Definitely that kit type twang with some liquorice and quite a viscous smooth mouthfeel. Wild Yeast maybe? There's a bit of a grassy bitterness in the aftertaste and a cloying sweetness despite finishing at 1.003! But other than that is a pretty easy drinking and light Porter. Considering I made it from second runnings out of a full batch of beer it's not that bad. Think I might just leave it to age, see if that helps. Interested to see how this same wild Yeast works with the full beer I have fermenting at the moment. Hoping that's much better.
