This smoked mackerel salad is packed with healthy ingredients like quinoa, beans and courgette. It makes the perfect summer lunch or dinner.
This recipe is a twist on the classic carbonara. The smoky richness of the mackerel goes well with the creamy egg and Parmesan sauce.
Ingredients: 200g spaghetti. 200g smoked mackerel fillets, skin removed. 2 large free-range eggs. 50g Parmesan cheese, finely grated. 1 lemon, zest and juice. 1 tablespoon olive oil. 2 cloves of garlic, finely chopped. Small bunch of fresh parsley, finely chopped. Salt and freshly ground black pepper.
Instructions: Follow the directions on the package and cook the spaghetti until it is al dente in a large pan of boiling salted water. In the meantime, put the smoked mackerel flakes into a bowl and throw away any bones. Put the eggs, Parmesan cheese, lemon zest, and lemon juice in a different bowl and mix them together using a whisk. Add black pepper. In a big pan, heat the olive oil over medium-low heat. Put in the garlic and cook for one to two minutes, until it smells good. To warm the mackerel through, add the flaked fish to the pan and toss it around for one minute. After the spaghetti is done, drain it and set aside a cup of the pasta water. Toss the drained spaghetti with the mackerel in the frying pan after you add them. After taking the pan off the heat, quickly add the egg mixture and toss the pasta around to coat it in the sauce. Add some pasta water to thin it out if it's too thick. Put chopped parsley on top, and if you need to, add salt and more black pepper. Serve right away.
