Creamy Roasted Vegetable Soup - Delicious & Smooth

Ingredients: 1/4 cup unsalted butter. 1/4 cup all-purpose flour. 1/2 cup diced onion. 1/2 cup diced celery. 1/2 cup diced carrots. 2 cups chicken or vegetable broth. 2 cups whole milk. 2 cups sharp cheddar cheese, shredded. 1/2 teaspoon Dijon mustard. 1/4 teaspoon cayenne pepper. Salt and black pepper to taste. Chopped chives for garnish.
Instructions: Melt the butter in a big pot over medium-low heat. To make a roux, add the flour and keep stirring it in for two to three minutes, until it turns golden brown. Put in the carrots, onions, and celery. Cook the vegetables in oil until they get soft. Slowly add the chicken or vegetable broth while whisking the mixture to make sure it is smooth. Add the milk and keep whisking until everything is well mixed and the mixture gets a little thicker. Add the shredded cheddar cheese and mix it in until it melts and is fully mixed in. Mix in the cayenne pepper, salt, and black pepper. Make the seasonings taste better. Let the flavors blend by simmering the soup on low heat for 15 to 20 minutes.
