Ingredients: 1 cup rolled oats. 1/2 cup almond butter. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. Pinch of salt. 2 tablespoons coconut flour. 2 tablespoons ground flaxseed. 2 tablespoons chopped nuts e.g., almonds, walnuts. 2 tablespoons raisins or dried cranberries.
Instructions: Put the rolled oats, almond butter, honey or maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt in a bowl. Mix the ground flaxseed and coconut flour into the mixture well until everything is well mixed in. The chopped nuts and raisins or dried cranberries should be carefully mixed in. Roll the mixture into small balls that are easy to eat. Put the energy bites on a baking sheet lined with parchment paper. Chill them in the fridge for 30 minutes to make them firm. When they are firm, put the energy bites in a container that won't let air in. Keep them in the fridge for a quick and energizing snack.
