Improve the quality of your snacks with this delicious Lemon-Artichoke Hummus. It is a flavorful and creamy dip that goes well with any meal because it is the ideal balance of savory artichokes and zesty lemon.
Ingredients: 1 can 15 ounces chickpeas, drained and rinsed. 1/4 cup tahini. 2 cloves garlic, minced. 1/4 cup lemon juice. 1/4 cup olive oil. 1/2 cup canned artichoke hearts, drained and chopped. 1 teaspoon ground cumin. Salt and pepper to taste. 2 tablespoons water adjust as needed. 1 tablespoon fresh parsley, chopped for garnish.
Instructions: In a food processor, combine chickpeas, tahini, minced garlic, lemon juice, and olive oil. Blend until smooth, scraping down the sides as needed. Add chopped artichoke hearts, ground cumin, salt, and pepper to the mixture. Blend again until well combined and creamy. If the mixture is too thick, add water gradually until desired consistency is reached. Taste and adjust seasoning as needed with more salt, pepper, or lemon juice. Transfer the lemon-artichoke hummus to a serving bowl, garnish with chopped fresh parsley. Serve with pita bread, fresh veggies, or your favorite crackers. Enjoy!
