This work week is coming to a close and its been a pretty successful one health wise. I have been on track and have filled up on shredded buffalo chicken. Tomorrow I will be heading to pick up some pork from the awesome Barington Natural Farms. I worked out Mon, Tues, and Wed, and will be going in tomorrow as well. Tonight I will be having a lovely seafood dinner with an old friend and think that it calls for a Moscow Mule.
Tomorrow I plan on slow cooking a ham, first time cooking one. Will post a recipe later and let you know how it goes.
This morning on my walk to work, I stopped at my new favorite establishment Snap Kitchen and picked up some paleo banana pancakes, and beef jerky. The pancakes were freaking fantastic, made with egg, almond butter, banana, ginger, nutmeg, and a little maple syrup. So far from Snap I recommend the grass fed lamb lasagna, paleo banana pancakes, and the beef jerky.
This weekend, I definitely plan on making better choices and think the ham will help with that. I’m also incredibly tired. I’ve been too much in my head lately. I don't think people realize when they are being mean sometimes. Maybe they do but I need to learn to tune it out. Other people do not measure your worth. You’re worth everything. You’re irreplaceable, you’re one of a kind, and you are loved.

Monday, Monday. Feeling like a little bit of a wind-down is coming on which is good. This last weekend was amazing. Went to my friend’s bridal shower on Saturday which was so fun! My aunt amy came in to visit, and we had a great time drinking wine, eating good food, shopping, talking about my beloved grandpap who we miss so much, and visiting the most beautiful baby in the whole world, my niece. I hope I’m as great as an Aunt as my Aunt Amy is :). I’ve got some big shoes to fill.
On the food wise front this weekend...lol I did not eat so healthy. But I did get a really good workout in on Saturday morning, and went for a run on Sunday. Starting the week off right though, I had a banana and some almonds this morning, and for lunch (since I was a lazy bum yesterday) I went out and got Snap Kitchen. They gave me a free grocery tote...which is awesome because I am trying to stop being so wasteful! I got the chicken spring rolls snack, and the Mediterranean spaghetti squash. The spring rolls were pretty good, and the spaghetti squash was tasty but not proportioned well (both dishes combined about 470 calories). I got the spring rolls because I wanted some protein since my main dish was vegetarian. The dish had olives, tomatoes, capers, some green onions, tiny amount of cheese (which I preferred actually), and of course the spaghetti squash. There was way too much squash and not enough of other items..I got like three olives and four tomatoes lol (i probably should have looked at it better but it just sounded so good). I have lots left over, so I am definitely going to utilize that tonight, maybe add some more tomatoes and bacon and have that for dinner. Next time if I get that, I would probably get the almond crusted chicken strips to go with it. The grass fed lamb lasagna is still my fav. There was this watermelon kale side salad that looking amazing too.
Tonight I am going to the gym for yoga, and will need to stop by the grocery store. I am going to make slow cooker buffalo chicken for tomorrow night that I will set up in the morning. I will reblog that recipe for viewing.
Its probably going to be a late night...le sigh.
Snap Kitchen is a must for healthy eaters on the go! For the days I forget or I’m just too tired to make a lunch this is a great option to have. It has everything from pancakes to salads soups pastas enchiladas and much more! All natural, gluten free, healthy, and delicious. They list all the ingredients/nutrition facts on their labels. You simply take it back to the office and heat it up (they have microwaves there too). I love Pret-A-Manger but this has many more options if you want something more than just a wrap or salad.
