Snowcap Cookies are delightful treats with a soft and chewy texture, topped with white chocolate chips that resemble snowy caps. The combination of coconut and pecans adds a nutty sweetness, making them perfect for holiday gatherings or any time you crave a comforting cookie.
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 2 cups white chocolate chips. 1 cup shredded coconut. 1/2 cup chopped pecans.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Fold in the white chocolate chips, shredded coconut, and chopped pecans. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Enjoy these delicious snowcap cookies with a glass of milk or your favorite hot beverage!
