Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 tsp salt. 1 tsp baking soda. 2 cups all-purpose flour. 1 cup rolled oats. 1 cup chopped salted peanuts. 1 cup butterscotch chips.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the salt, baking soda, and all-purpose flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
