6 and 12 were already answered, so I'm answering 7 and 13 instead, I hope that's okay!
7: What do your lair members do for entertainment, at both a personal & societal level?
There is a stage where regular performances are held, most of the time it is Wisp accompanied by Lyre, singing and plucking together.
There's also board games, and both in the library and the Chattering Roof Inn you'll be able to sit down and if you're bored you can go sit down with someone and play.
Personal entertainment varies, but the area around the lair is safe to explore, there's a fishing dock, and occasionally dragons will just ask others if they need help with anything, it's quite a mutual and social place.
13: Are there any specific greetings or goodbyes present? Does it differ at times, events or relations? Where do these greetings/goodbyes originate?
It is generally customary to bring a few baked goods when visiting someone, not just because ShadowStar and Andromeda's baking skills are wonderful, but also because of Scheelite, she always makes sure to bring at least a little treat when she comes visiting someone in their home, and it kind of caught on.
These of course change depending on if there are any celebrations happening, such as the monthly flight celebrations or with the time of year, such as collecting a type of nut in fall and storing it in a hand made bamboo container, or seasonal flowers.
Goodbyes only involve gifts if it is permanent, or an extended period of time such as someone leaving the lair, or going on travels to another lair.
In that case engraved stones or effigies representing the windsinger are often given, as a blessing for the road.
While not an originally intended use, sometimes in a pinch these can be sold off to collectors or otherwise for a bit of coin when outside of Wind's territory, meaning they are also a bit of a lifeline if you need shelter or food in an emergency.
20: Are there any rights of passage or milestones that a generally accepted or striven for? Are there different standards for different genders or breeds?
There are a few stages in life that are celebrated, such as the age when your wings are matured, when your feathers or claws are fully grown, and reaching maturity.
While there are no systems for recruitment or finding a job in the lair, once you reach maturity it is up to you to find your calling. Perhaps to join the guard, maybe picking up something else entirely, or being the next in line in your parents' task.
No breed is treated differently aside from their breed specific traditions, such as a guardian's charge. If a guardian does not find their charge within the lair, a big goodbye celebration is being held, with wishes and gifts that they may be successful.
40: Is there any flora or fauna specific to your lair? How does the ecosystem work?
New Moon Sanctuary is quite close to a few other regions, ice is across the coast to the west, plague is up north, so is arcane, water isn't all that far away either, meaning occasionally things get a bit mixed.
During certain seasons it is best not to go in the water as you might be bathing in water that came over from arcane, unless you're interested in glowing pink for a week after and feeling itchy and weird. A dragon that recently joined my lair, Nanduri, is a geologist and biologist there to take samples, she says it's mostly for agricultural purposes and monitoring the different nutrient levels across the wind region, but for that she is collecting a few too many pink glowing bits in a test tube and scanning the soil with strange machines for it to seem completely believable.
The fauna is also strongly affected by the twisting crescendo, it changes in size during the year, growing smaller in winter, and for a few weeks in early spring it grows to a terrifying size, and during that time most animals hide in their holes or leave the region, meaning meat is scarce.
The dragons don't like going outside too much either during that time, even if the lair is constructed a safe distance away it is still not pleasant to have to use your entire body weight to walk.
