In our coffee lab this morning experimenting with our newest creations. Black Stout, smoked espresso, sourdough bread. Chocolate biscotti made with cacao rum, twice reconstituted chocolate, cacao rum soaked almonds. Espresso biscotti made with Cup of Luxury's Black Label espresso, brown sugar, and 12-year aged rum. Chocolate and Somrus fusion biscotti. Divine. Made with Cup of Luxury's Black Label, Somrus, chocolate chips, and pistachios. SomruS Truffles & Kulfsicle

SomruS Truffles

¼ cup Heavy Cream 12 ounces Organic White Chocolate drops 3 tablespoons SomruS ½ teaspoon vanilla extract 12 ounces Dark Chocolate ½ cup Hazelnuts

Add cream to a double boiler. When warm slowly add and stir in white chocolate drops with wire whisk. When completely melted stir in SomruS and vanilla. Put in refrigerator and chill until firm (about an hour). Prepare parchment paper board. Once firm, using a small ice cream scoop, or two spoons, put dollops of the ganache mix on the parchment board. Put the dollops back in the cooler for 30mins or until firm. Prepare chocolate covering and nuts. Put nuts on baking sheet and bake for 10mins at 350 degrees. Chop the nuts. Temper dark chocolate http://www.craftybaking.com/howto/chocolate-temper-or-tempering-techniques Using two spoons dip and coat the ganache balls with the tempered dark chocolate. Set them on a clean parchment board. Sprinkle with nuts before the chocolate hardens.

Kulfsicle

¼ part SomruS ¼ part filtered water ½ part light or heavy cream 2 cups ground pistachios and almonds

In a bowl, add measured parts of SomruS, cream and water and stir until well mixed. Fill popsicle molds with liquid, and add popsicle stick. Cover and freeze overnight. When ready to serve, place molds in bowl of warm water to loosen popsicles. Dip popsicle in ground nut mixture before serving.
