Enter this version, with its red pepper and red chili and its corn caramelised in butter before adding the stock. It’s as colourful a chowder as the restaurants the book is from, and full of flavour too. And any soup that has the word chowder in it always launches my kids into a rendition of the Mighty Boosh’s soup crimp, so that’s my main reason for cooking this again right there.
