Baked Tomato Feta Basil Dinner
The tomatoes, garlic and basil cold come fresh from my garden...and I’m up for that to happen as soon as they’re ripe and ready to roll which is later this summer. Until then, I’ll have to satisfy myself with this fragrant, flavorful tomato feta dish. This one had no leftovers - guaranteed when I fixed it this last weekend.
4 c. flavorful tomatoes - heirloom, cherry, or fresh from your garden, chopped
2 c. feta cheese, crumbled
1/2 c. oil
dash salt/ground pepper
2 t. garlic, minced
1/2 c. basil, fresh, ribbon cut using kitchen scissors to speed process
Preheat oven to 400 degrees. In a large baking dish, toss together all ingredients. Bake 30 - 40 min. Serve up immediately on a bed of steaming hot brown rice or not to save carbs - your choice.

Veggie fried rice, sesame, tofu & chilli eggs, from Super Food Family Classics, by Jamie Oliver +++++ Nothing will ever be as good as the tofu that I ate in a seedy izakaya in deep Ikebukuro, but I do think that tofu gets too little attention. Whether you’re a vegetarian or not, tofu is a great tool for soaking up textures and flavours, especially crunchy sesame and spicy chili. I messed with this fried rice quite a lot, it was larder cooking at its finest. So instead of exotic mushrooms I just used the bog standard button mushrooms I had leftover, then I threw in frozen green beans because I had no mange-touts. Couldn’t find any chilli sauce, so I reached for my favourite, yep the gochujang.
