HOW TO MAKE JUKUT ARES
If we eat at the warung there will be a soupy vegetable . You can have Soto, Rawon, etc the ingredients are commmonly chicken and various kinds of vegetables . But in Bali you can get authentic soupy vegetables, which called JUKUT ARES. Jukut Ares made of young banana tree which added with spices. You could add chicken, Geese (most delicious), you could also use pork . It is quite simple actually but it requires patience. Young banana trees that have been cleaned, cut into thick slices about 1 cm, then the fibers of the banana tree should be cleaned. Placed in a bowl then sprinkle with salt and coconut oil so they will be soft. Young Banana stem is not hard. Then stir the sliced banana by hand but should not be squeezed, because it would not be good . Within a few minutes they will be soft . When it's soft and the water is removed take aside and rest. Fry the spices in a pan with enough oil, put some meat then cooked until the meat fragrant. Then put in the soft banana stem. Add some water. Turn off the heat when it is boil.
Spices:
• 10 pcs Shallots • 5 cloves garlic • Cayenne 3 pcs • Cayenne 3 pcs • 1 pcs Laos • 1 tbsp salt • Ginger 1/2 tsp • Turmeric 1tsp • Bay leaves 3 lbr • 2 tsp shrimp paste
