The island ahi in these burgers gives them a deliciously tropical twist. Marinating fresh ahi tuna steaks in a tangy soy-sesame-lime sauce, grilling them until they're just right, and then topping them with Swiss cheese, grilled pineapple, and a cool cilantro-chile-lime sauce. The flavors in this burger are really strong, and it's great for a summer cookout or whenever you want a taste of the islands.
Ingredients: 1 lb fresh ahi tuna steaks. 1/4 cup soy sauce. 2 tablespoons sesame oil. 2 tablespoons fresh lime juice. 2 cloves garlic, minced. 1 teaspoon grated fresh ginger. 1/4 teaspoon red pepper flakes. 4 hamburger buns. 1 cup shredded lettuce. 1 tomato, sliced. 1/2 red onion, thinly sliced. 1/4 cup fresh cilantro leaves. 4 slices pineapple canned or fresh. 4 slices Swiss cheese. Salt and black pepper to taste. Vegetable oil for grilling.
Instructions: In a bowl, whisk together soy sauce, sesame oil, lime juice, minced garlic, grated ginger, and red pepper flakes to make the marinade. Cut the ahi tuna into four equal portions and place them in a shallow dish. Pour the marinade over the tuna steaks, cover, and refrigerate for 30 minutes. Preheat your grill to medium-high heat. Remove the ahi tuna from the marinade and season with salt and black pepper. Grill the tuna steaks for about 2-3 minutes per side for medium-rare doneness, or longer if desired. While the tuna is grilling, lightly toast the hamburger buns on the grill. In a separate small bowl, combine fresh cilantro leaves and a squeeze of lime juice to make a cilantro-lime sauce. Assemble the burgers by placing a grilled ahi tuna steak on the bottom half of each toasted bun. Top with a slice of Swiss cheese, a slice of pineapple, shredded lettuce, tomato slices, and red onion. Drizzle the cilantro-lime sauce over the toppings, and then place the top bun halves on each burger. Serve the Island Ahi Burgers immediately with your favorite side dishes. Enjoy!
